Badam kheer(Almond Kheer)

Almonds kheer

Ingredients:

  1. Almonds: one cup
  2. Rice:2 tablespoons full
  3. Sugar: as per taste
  4. Milk: 1 litre
  5. Cardomom powder:1 teaspoon
  6. Saffron:2-3 strands
  7. Khoya:1 cup

Method:

  1. Soak almonds and rice in two different bowls for 3-4 hours.
  2. Remove the skin of Almonds and make a fine paste in mixer.
  3. Crush the soaked rice into small crystals or you can even grind for few seconds .Do not make powder .
  4. Boil milk.
  5. Add almonds paste and rice ( add water to rice before adding to boiling milk and add little by little with stirring to avoid formation of lumps).
  6. Boil for 8-9 minutes with continuous stirring.
  7. Add khoya and stir for a minute.
  8. Add sugar, cardomom powder and saffron.
  9. Simmer for 4-5 minutes and stir in between.
  10. Switch off the flame.
  11. Store in refrigerator and serve chilled
