For Garnishing:

Ingredients:

  • Onions: 4-5 finely chopped
  • Cashews: a handful or a small cup full

Method: 

  • In a frying pan add oil for frying and heat it. When the oil gets heated add cashews and fry till they turn golden brown.Remove it and keep it aside.
  • In the same oil add sliced onions and fry till they turn golden brown. Remove it and keep aside.


For Daliya:

Ingredients:

  1. Wheat rawa or haleem rawa(crushed wheat):250 gms
  2. Red lentils(masoor dal): 3/4 cup
  3. Bengal gram( chana dal):3/4 cup
  4. Black gram(urad dal or mash dal):1 cup
  5. Green gram(moong dal):3/4 cup
  6. Rice: 3/4 cup
  7. Water: 5-6 glasses

Method:

  • Soak all the above ingredients in water for 2-3 hours.
  • In a pressure cooker add chana dal,urad dal ,mong dal and rice and add enough water. Pressure cook for 5-6 vessels until all the dals are cooked completely.
Cooked lentils
  • In another bowl add broken wheat (dalia),4-5 green chillies split,one teaspoon whole black pepper and enough water and cook till the dalia becomes soft. It takes approximately 20-25 minutes.

  • Allow them to cool completely.
  • Mash the mixtures using a masher or you can grind them by adding little amount of water if nessesary.
  • Keep this mixture aside

Ingredients for mutton gravy

  1. Mutton( you can take bone less):1 kg
  2. Corriander:2 bunches
  3. Mint leaves: 1 bunch
  4. Cooking oil:3 tablespoons
  5. Ginger garlic paste: 2 tablespoons
  6. Turmeric powder: 1 teaspoon
  7. Salt:1 1/4  teaspoon( adjust as per taste)

Method:

  • In a sauce pan add oil ,when the oil gets heated add ginger garlic paste and saute for few seconds.
  • Add mutton,salt, turmeric powder and four cups of water.
  • Pressure cook upto 5 whistles. Make sure the mutton is cooked well.
  • Allow the mixture to cool completely and separate the water and mash the mutton with a fork and remove the bones if you have taken mutton with bones.

Final preparations:

Ingredients:

  1. Whole spices (garam masala)

  2. Garam masala
  3. Oil:2 tablespoons
  4. Ginger garlic paste:2 teaspoons
  5. Corriander seeds: two teaspoons
  6. Potli masala: you can buy from any grocery store. Take 2 tablespoons of it and boil it by adding some water.

Method:

  • Heat oil in a large pan ,add 2 tablespoons of oil ( which was used for frying onions). Add 2 teaspoons of ginger garlic paste saute for few seconds. Add whole spices( garam masala), corriander seeds ,potli masala and mashed mutton and saute well.

  • Add 3 tablespoons of curd and saute for two minutes.Add  red chilli powder and salt if it is required ( taste and adjust it)

  • Add slowly the lentils and broken wheat mixture which we have grinded and kept aside.

  • Now add little quantities of water which we have separated from mutton and keep mixing .
Add mutton water
  • Repeat the process of mixing and mashing by keeping the flame between low to medium. Switch off the flame when the consistency becomes thick and greasy.
Cook

  • Dish out in a plate . Add fried onions ,cashews and squeeze lemon juice. Serve this delicious and healthy mutton haleem.
