Baigan tomato curry
Ingredients:
- Brinjal:5-6 (medium size)
- Tomatoes:6-7 ( medium size)
- Onion: 1
- Bay leaves:2
- Salt: 1 1/2 teaspoon ( as per taste)
- Turmeric powder:1/2 teaspoon
- Red chilli powder:2 teaspoon full
- Garam masala:1 teaspoon
- Corriander powder:1 teaspoon
- Zeera powder:1/2 teaspoon
- Corriander leaves:a handful
- Green chillies:3-4
- Oil: 3 tablespoons
- Ginger garlic paste:2 teaspoon full
- Turmeric juice:1 1/2 cup
Method:
- Cut the brinjal into slices ( not very thin) and keep in water
- In a frying pan add oil ( enough for frying brinjal)
- Add the brinjal and fry till they start changing color.
- Take them out in a dish
- Now remove excess oil and keep only 2 tablespoons of oil in the pan.
- Add two bay leaves.
- Add sliced onions and saute till they turn golden brown.
- Add ginger garlic paste and saute till the raw smell goes.
- Add salt ,red chilli powder, turmeric powder, corriander powder, zeera powder and saute for half a minute.Do not burn the masalas.
- Add chopped tomatoes and cook on medium flame until the tomatoes are completely soft.
- Now add fried brinjal and mix well
- Add turmeric juice and cook on low flame for about 10 minutes.
- Add garam masala powder.
- Add corriander leaves and split green chillies and switch off the flame.
- Serve with rice or chapattis.
