Brinjal curry

Ingredients:

  1. Brinjal:5-6 (medium size)
  2. Tomatoes:6-7 ( medium size)
  3. Onion: 1 
  4. Bay leaves:2
  5. Salt: 1 1/2 teaspoon ( as per taste)
  6. Turmeric powder:1/2 teaspoon
  7. Red chilli powder:2 teaspoon full
  8. Garam masala:1 teaspoon
  9. Corriander powder:1 teaspoon
  10. Zeera powder:1/2 teaspoon
  11. Corriander leaves:a handful
  12. Green chillies:3-4
  13. Oil: 3 tablespoons
  14. Ginger garlic paste:2 teaspoon full
  15. Turmeric juice:1 1/2 cup 

Method:

  1. Cut the brinjal into slices ( not very thin) and keep in water

  2. Brinjal
  3. In a frying pan add oil ( enough for frying brinjal)
  4. Add the brinjal and fry till they start changing color.
  5. Take them out in a dish
  6. Now remove excess oil and keep only 2 tablespoons of oil in the pan.
  7. Add two bay leaves.
  8. Add sliced onions and saute till they turn golden brown.
  9. Add ginger garlic paste and saute till the raw smell goes.
  10. Add salt ,red chilli powder, turmeric powder, corriander powder, zeera powder and saute for half a minute.Do not burn the masalas.
  11. Add chopped tomatoes and cook on medium flame until the tomatoes are completely soft.
  12. Now add fried brinjal and mix well
  13. Add turmeric juice and cook on low flame for about 10 minutes.
  14. Add garam masala powder.
  15. Add corriander leaves and split green chillies and switch off the flame.
  16. Serve with rice or chapattis.
